Fruity Asian Chicken Salad
This chicken salad is so delicious, I have eaten it just about every day this summer. I've taken several Asian chicken salads and tweaked them to make the best Asian chicken salad out there. Well, at least I think so. My mom has a recipe that she likes better which I will share that with you at a later date, and you can decide which is better.You won't hurt my feelings. Well, you might, but it'll be ok. I can take it!
Make the dressing by combining fresh garlic, fresh ginger, salt, pepper, rice wine vinegar, and honey. Whisk these together well then gradually add the olive oil while still whisking the other ingredients.

Additions to the dressing:
Use sugar in place of honey. Honey tends to pull the dressing together, so that's what I prefer. It's also a natural sweetener, and I try to avoid refined foods.
When I have limes, I like to squeeze a couple tablespoons of the juice in with the first ingredients.
Add a dash of sesame oil. And by a dash I mean like a drop. This stuff is powerful! You can ruin a dish with too much of it. If you love sesame oil, then use the whole bottle, well, probably not really, but be careful with it if you've never tried it.
I use a huge bowl for my salad, because I like a huge salad. Don't judge. You will do it too once you taste this. Tear up as much romaine lettuce as you like. This is when I like to add half the dressing and coat the leaves.
Add water chestnuts, mandarin oranges, green apples, carrots, and chicken.
Top with the rest of the dressing, and garnish with green onions, sesame seeds, and sliced almonds.
When you finish the salad, there will be some extra juice and dressing in the bottom of the bowl. It's ok to turn the bowl up and drink this. I'm not saying I have experience with that or anything, though.
Fruity Asian Chicken Salad
- For the Dressing
- 1 T fresh Garlic, minced
- 3 T fresh Ginger, minced or grated
- 2 T Rice Wine Vinegar
- 1 T Honey
- 1/4-1/2 c. Extra Virgin Olive Oil
- 8-15 Lettuce Leaves
- 1/4 c. Water Chestnuts, sliced
- 1/2 c. Mandarin Oranges, drained
- 1/2 Green Apple, chopped
- 1 c. Slivered Carrots (you can get these in a bag)
- 1 c. Chicken, shredded
- 2 T Sliced Almonds
- 1 tsp Sesame Seeds
- 1 T Green Onions, chopped
For the Salad
- Whisk all dressing ingredients except for the olive oil.
- Continue whisking the ingredients while adding the olive oil.
- Tear and dress the lettuce leaves.
- Add the rest of the salad ingredients through the chicken. Dress again if desired.
- Garnish with almonds, sesame seeds, and green onions.
